Rings of acid resistance grant intrinsic resistance to acid while being worn.

They are valuable to different degrees all throughout the game, more so than other elemental resistance rings because neither the Ring of the High Kings nor the elemental gauntlets offer acid resistance, and acid vortices happen to be the most damaging vortex in the game. Don't sell all of them unless you are intrinsically acid immune.
